WESTPORT, Mar 17 (Reuters Health) - In a study of nearly 10,000
people followed for up to 24 years, researchers in Finland and
Sweden have found evidence that dietary exposure to N-nitroso
compounds can induce colorectal cancer. According to the
investigators, N-nitroso compounds are found in foods that have
added nitrates or nitrites, such as fish and meat that has been
salt-preserved, smoked or direct-fire dried.
Something else to be concerned about. May I add that drinking up to one
gallon of spring/distilled water a day or one 8 oz glass prior and after
dinners is a great preventative for many diseases and washing out
nitrates
